Early in the 17th century, local street vendors established the first market as an unofficial wet market.The market was fully built and designated a formal enterprise along French Colonial standards when the nearby Gia Dinh citadel was overthrown by French imperialists in 1859.The "Les Halles Centrales" building was rebuilt from the old, which had a wooden thatched roof and was later destroyed by fire in 1870.

The market was relocated into the structure that is known today in 1912, using a fireproof metal framework to become the biggest and most important market in the city.The original market structure, known as the Old Market or Ch' Cu, was converted into a wholesale market after all the sellers relocated to the new structure rather than being razed.In order to set the new market apart from the old one, its name was changed to Ben Thanh Market.The words "harbour" (Ben) and "citadel" are the origin of the name Ben Thanh (Thanh).

In order to stay up with the city's movement towards a modern blend, the new market underwent extensive modifications in 1985.Despite numerous repairs over the years, the market is still among Saigon's oldest and most recognisable remaining buildings.
